Job Description:
Key Responsibilities

Product Development & R&D

  • Develop and optimize recipes for:

    • Oven-baked cookies (e.g., shortbread, soft, and crisp varieties)

    • Hardliner biscuits (e.g., Marie-type, crackers)

    • Sugar-coated peanuts

    • Chocolate and compound-based products

  • Conduct lab and pilot plant trials to evaluate texture, flavor, shelf-life, and cost-effectiveness.

  • Collaborate with the marketing team to align new product development with consumer trends.

Production Oversight

  • Oversee daily operations of production lines for cookies, peanuts, and chocolates.

  • Troubleshoot process and equipment issues (e.g., ovens, coating pans, cooling tunnels).

  • Train production staff on standard operating procedures and new formulations.

Quality Assurance & Food Safety

  • Implement and manage robust QC processes across all production stages.

  • Ensure compliance with food safety standards such as HACCP, ISO 22000, and FSSC.

  • Lead internal audits and support corrective and preventive actions (CAPA).

Sourcing & Cost Optimization

  • Source high-quality ingredients including flours, fats, sugars, chocolate compounds, and coatings.

  • Work with procurement to optimize vendor selection for quality and cost efficiency.

  • Support local and regional sourcing initiatives for sustainability and supply continuity.

Required Qualifications

Education

  • Bachelor’s or Master’s degree in Food Science & Technology or a related discipline.

Experience

  • Minimum of 5 years in food manufacturing, with a strong focus on:

    • Cookies and biscuits

    • Sugar-coated snacks

    • Chocolate/confectionery products

  • Proven success in both product development and large-scale production.

  • Hands-on experience with industrial baking and chocolate-coating equipment.

Skills

  • Strong knowledge of food chemistry and ingredient functionality.

  • Effective leadership, team training, and communication skills.

  • Ability to set up, optimize, or scale production lines from scratch.

  • Attention to detail with excellent documentation and reporting capabilities.
